- Beef broth: three quarters cup Liquid base that keeps the brisket moist while building flavor
- Brown sugar: in the rub balances the smoky spices and caramelizes nicely
- Paprika: adds vibrant color and a mild smoky sweetness opt for sweet paprika if possible
- Chili powder: brings gentle heat and complexity Use a fresh batch to maximize flavor
- Garlic powder and onion powder: complement fresh garlic and give the rub boldness
- Salt and ground black pepper: enhance all flavors do not skip these essential seasonings
- Ground mustard: adds tang and sharpness helping cut through richness
- Ground cumin: offers warm earthiness that rounds out the rub
- BBQ sauce ingredients: combine ketchup, apple cider vinegar, molasses, Worcestershire sauce and liquid smoke for that classic smoky, sweet, and tangy taste
Instructions
- Build The Rub:
- Mix all the rub ingredients together in a small bowl. Pat your brisket dry with a paper towel then rub the spice mix evenly all over the meat. You can use it immediately or wrap it and chill it up to 24 hours for deeper flavor.
- Sear The Meat:
- Set your Instant Pot to sauté and heat the olive oil until shimmering. Sear the brisket on both sides for three to five minutes until golden brown. If your brisket is cut into smaller pieces, do this in batches to avoid overcrowding and steaming.
- Sauté Garlic And Deglaze:
- Remove the meat, then add chopped garlic to the pot and sauté for 30 seconds to one minute until fragrant. Cancel sauté mode, pour in beef broth, and scrape the pot bottom with a wooden spoon to lift all those tasty browned bits. Add the prepared BBQ sauce and stir well.
- Pressure Cook The Brisket:
- Return the brisket with any juices to the pot. Lock the lid, set to manual pressure, and cook for seventy-five minutes. When done, allow the pressure to release naturally for ten to fifteen minutes before doing a quick release.
- Rest The Meat And Reduce Sauce:
- Transfer brisket to a cutting board and cover loosely with foil to rest for ten to fifteen minutes. Turn Instant Pot back to sauté and simmer the sauce gently for five to eight minutes until slightly thickened. Cancel sauté mode.
- Slice And Serve:
- Cut the brisket against the grain into slices and serve with the rich BBQ sauce. For moister results, you can return the sliced brisket to the pot, cover it in sauce, and keep warm until ready to serve.
One time I brought this to a family potluck and everyone thought I spent hours smoking the brisket outdoors.
Storage Tips
Store any leftover brisket in an airtight container in the refrigerator for up to four days. Keep the sauce separate if possible to maintain texture but you can also store together. Reheat gently in a pan over low heat adding a splash of broth or water if needed.
Ingredient Swaps
If you do not have beef broth, chicken broth or even water with a splash of soy sauce works well. You can replace brown sugar with maple syrup or honey in both the rub and sauce for a different but still delicious sweetness. For less heat omit the cayenne or use smoked paprika instead.
Serving Ideas
Serve this brisket with creamy mashed potatoes or buttered noodles to soak up the sauce. It is also great piled high on toasted buns for a homemade BBQ sandwich topped with pickles and coleslaw. Roasted vegetables or a crisp green salad balance the richness beautifully.
This brisket recipe combines speed with flavor so you can enjoy barbecue any night of the week.
