This Lava Flow drink is my favorite way to bring a tropical escape right into my kitchen. It’s perfect when I want something refreshing and vibrant without a complicated recipe or fancy equipment.
I first made this after a beach vacation and the bright flavors instantly took me back. It quickly became the signature cocktail for summer nights with friends.
Ingredients
- Coconut rum: offers a smooth tropical flavor that blends perfectly with the fruit Choose one with a good balance of sweetness and coconut aroma
- White rum: is the base spirit opt for a clean, light variety to let the other flavors shine
- Frozen strawberries: add natural sweetness and give the drink a rich color Pick firm, fragrant berries or high quality frozen fruit without added sugar
- Pineapple juice: provides bright acidity and tropical sweetness Go for fresh or high quality cold-pressed for the best taste
- Cream of coconut: creates a creamy texture and adds depth Make sure to use cream of coconut, not coconut milk, for the signature richness
- Crushed ice: chills and dilutes just enough so the drink is cool but not watered down
- Pineapple slices and whole strawberries: make for attractive garnishes and enhance presentation
Instructions
- Build The Strawberry Base:
- In a blender, add the coconut rum, white rum, and frozen strawberries. Blend on high until you get a smooth puree with no large chunks. Pour this mixture into a clean container or pitcher and set aside.
- Clean The Blender:
- Rinse and wipe the blender jar to remove any strawberry residue to keep the next layer fresh and bright.
- Make The Pineapple Coconut Layer:
- Add pineapple juice, cream of coconut, and crushed ice to the clean blender. Blend until the mixture is smooth and slightly thick but still pourable.
- Assemble The Drink:
- Pour the strawberry rum puree evenly into four glasses filling them about halfway. Slowly pour the pineapple coconut mixture on top so it drifts down creating a layered lava flow effect.
- Garnish And Serve:
- Add pineapple slices and strawberries on the rim or floated gently on top if you like. Serve with a straw to swirl the flavors together as you drink.
My favorite part of this recipe is watching the two layers swirl when you pour the pineapple coconut mixture over the strawberry base It’s such a fun visual that always gets compliments from guests. For me it’s more than just a drink — it’s a little tropical celebration in a glass reminding me of carefree moments on vacation.
Storage tips
Keep leftover strawberry puree refrigerated in an airtight container for up to 24 hours. The pineapple coconut mixture is best made fresh but can also be stored chilled separately for a few hours. Combine and serve chilled when ready.
Ingredient swaps
Try swapping frozen mixed berries for the strawberries for a different fruity twist Use canned pineapple juice if fresh is unavailable For a non alcoholic version replace rums with coconut water and a splash of pineapple soda.
Serving ideas
Serve with a tropical fruit kabob of pineapple, mango, and strawberries on the side Fresh mint leaves can add a nice aroma and color contrast Try it as a dessert cocktail paired with coconut cake or key lime pie.
This drink’s layered look and tropical flavors make it a perfect choice for entertaining and relaxing moments alike.
