This classic Brazilian chocolate fudge ball is a simple indulgence that turns everyday ingredients into a party-ready treat. Brigadeiro is my go-to dessert when I want something sweet and special without a lot of fuss. It comes together quickly but still feels like a celebration in every bite.
I first made Brigadeiro after a friend brought some to a potluck and instantly fell in love. It became a dessert I always keep in my repertoire for birthdays or casual get-togethers.
Ingredients
- Sweetened Condensed Milk: brings that creamy sweetness which is the base of the fudge. Choose a well-sealed can for freshness
- Unsalted Butter: adds richness and helps the mixture cook smoothly. Use real butter for the best flavor
- Dark Chocolate: infuses deep cocoa notes. Pick a quality bar with at least 60 percent cacao& it really makes a difference
- Vermicelli for decorating: adds a crunchy contrast and a classic finish. Look for fresh, colorful sprinkles or nuts if you want to switch it up
Instructions
- Build The Mixture:
- Break the dark chocolate into small pieces and put them in a medium saucepan with the sweetened condensed milk and butter. Using lower heat prevents burning so set your stove to medium low.
- Cook Gently:
- Stir constantly with a flat wooden spatula or any heatproof utensil scraping the bottom of the pan to avoid scorch marks. This patience prevents bitterness. Continue until everything melts and thickens enough to leave a clear line when you drag the spatula through the mixture. This stage takes about ten minutes.
- Cool Completely:
- Take the pan off the heat and transfer the thickened fudge into a bowl. Cover it with plastic wrap pressed directly on the surface to avoid a crust forming. When it cools to room temperature put the bowl in the fridge until it is thoroughly chilled.
- Shape The Brigadeiros:
- Once cooled firm enough to handle, scoop tablespoon-sized portions and roll them quickly between your palms to create smooth balls. If your hands get sticky rub a little butter on them.
- Decorate And Serve:
- Roll each ball in vermicelli or your chosen topping, then set them in paper liners. Store in the fridge until ready to serve to keep their shape.
My favorite part has always been the chocolate itself. I have fond memories making these with my mom on lazy Sunday afternoons. Toasting the chocolate just right is key and I learned the hard way that skipping this step makes a big difference in flavor.
Storage tips
Store Brigadeiros tightly covered in the refrigerator up to five days. They can soften at room temperature but will firm up again when cold. Avoid freezing as the texture changes and they lose their creamy consistency.
Ingredient swaps
You can swap dark chocolate with milk chocolate for a sweeter fudge or try adding a splash of coffee or vanilla extract to enhance the flavor. Coconut oil in place of butter works if you prefer dairy-free but the texture changes a little.
Serving ideas
Serve Brigadeiros in miniature paper cups as bite-sized party snacks. They also pair beautifully with a strong espresso or fresh fruit like strawberries. Try crumbling them over vanilla ice cream for an extra touch of decadence.
The smell of melting chocolate combined with the creamy richness fills the kitchen with nostalgia making Brigadeiros one of my all-time favorite treats to make at home.
