# What You'll Need:

→ Tots

01 - As many tater tots as you want

→ Eggs

02 - 15 large eggs, beaten up
03 - Salt to sprinkle
04 - Black pepper the way you like it

→ Sausage Gravy

05 - Double portion of your go-to sausage gravy
06 - Cayenne powder if you want some heat
07 - Add red pepper flakes for a spicy kick

→ Garnish

08 - Shredded taco cheese mix to sprinkle
09 - Fresh spicy salsa on the side if you like

# How to Make It:

01 - Add shredded taco cheese on top. If you’re feeling it, spoon over some fresh salsa. Serve while it’s warm.
02 - Lay a base of crisped tots in each bowl. Scoop on plenty of eggs and pour sausage gravy over everything.
03 - Warm a large nonstick skillet on medium heat. Cook your beaten eggs with salt and pepper until mostly firm but still a bit soft.
04 - While tots bake, get your sausage gravy going. Throw in cayenne or red pepper flakes if you want some spice.
05 - Preheat oven to 425°F (218°C). Spread tater tots on a baking sheet. Bake about 30 minutes till they're crispy and golden, following the package instructions.
