Street Corn Cucumber Salad (Printable Version)

Refreshing blend of sweet corn, crisp cucumber, rotisserie chicken, and a zesty, creamy dressing.

# Ingredients Required:

01 - 1.5 English cucumbers, halved and sliced
02 - 1 jalapeno pepper, seeded and diced
03 - 0.25 red onion, diced
04 - 0.5 red bell pepper, seeded and diced
05 - 3 green onions, sliced
06 - 0.25 cup fresh cilantro, minced
07 - 1 lime, juice and zest
08 - 1 clove garlic, minced

09 - 2 cups rotisserie chicken, chopped

→ Canned Goods

10 - 432 g canned sweet corn, drained

→ Dairy and Condiments

11 - 120 ml plain Greek yogurt (2% fat or higher)
12 - 80 ml mayonnaise

→ Spices and Seasonings

13 - 1 tsp chili powder
14 - 0.5 tsp paprika
15 - 0.5 tsp ground cumin
16 - 0.25 tsp salt
17 - 0.25 tsp black pepper

# Guide to Cooking:

01 - Arrange cucumber slices in a single layer on paper towels. Cover with an additional layer of paper towels and press gently to absorb excess moisture. Allow to rest while preparing other ingredients.
02 - In a medium bowl, whisk together Greek yogurt, mayonnaise, minced garlic, lime juice and zest, chili powder, paprika, cumin, salt, and pepper until smooth. Adjust seasoning to taste, adding more cumin or chili powder if desired.
03 - In a large mixing bowl, combine cucumbers, drained corn, rotisserie chicken, cilantro, green onions, jalapeno, red onion, and red bell pepper.
04 - Pour most of the dressing over the salad ingredients and fold gently with a spatula until evenly coated. Add remaining dressing as preferred. Chill before serving and store leftovers in a sealed container in the refrigerator.

# Extra Suggestions:

01 - Use higher-fat Greek yogurt for a creamier texture. Adjust seasonings to personal preference. For increased spiciness, retain jalapeno seeds or add additional chili powder.
