Garlic Butter Beef Slow Cooker (Printable Version)

# What You'll Need:

→ Beef Bites

01 - 2 tablespoons olive oil for searing, if you want
02 - 1 teaspoon smoked paprika
03 - 1 teaspoon garlic powder
04 - 0.5 teaspoon black pepper, freshly cracked
05 - 1 teaspoon fine sea salt
06 - 900 grams chuck or sirloin beef, chopped into cubes about 2.5 cm

→ Potatoes

07 - 1 tablespoon olive oil
08 - 0.25 teaspoon black pepper
09 - 0.5 teaspoon fine sea salt
10 - 680 grams small potatoes or Yukon Gold, chunked if they're big

→ Garlic Butter Sauce

11 - 1 tablespoon Worcestershire sauce
12 - 120 millilitres beef broth
13 - 1 teaspoon dried rosemary or a big spoonful of chopped fresh rosemary
14 - 1 teaspoon dried thyme or use a nice heap tablespoon of fresh leaves
15 - 6 garlic cloves, finely chopped
16 - 4 tablespoons unsalted butter, melted

→ Optional Garnishes

17 - Chopped fresh parsley, around 2 tablespoons
18 - Some grated Parmesan cheese

# How to Make It:

01 - Dry off your beef cubes with paper towels so they're not wet. Then shake on the salt, pepper, smoked paprika, and garlic powder. Make sure you coat them all over.
02 - Warm up olive oil in a skillet over medium-high heat. Add some beef chunks at a time, browning each side for one or two minutes. Move them out to a plate once they've got color.
03 - Throw your chunked potatoes in a big bowl. Splash them with olive oil. Toss with salt and pepper so every bit gets covered.
04 - Grab a little bowl. Stir together melted butter, chopped garlic, thyme, rosemary, beef broth, and Worcestershire till it's all mixed up.
05 - Start with potatoes at the bottom of the slow cooker. Next, pile on the beef cubes. Pour the garlicky butter sauce over everything so it's all nice and covered.
06 - Put the lid on. Cook on high for 3 or 4 hours or use low and let it go for 6 to 8 hours. You'll know it's ready when the beef and potatoes are super soft and tasty.
07 - Right before dishing out, toss on some chopped parsley. Sprinkle over Parmesan if you're into it. Eat while it's warm—it's even better with fresh bread or a simple salad if you want.

# Additional Tips:

01 - If you're in a rush, you can skip browning the beef. Searing gives extra flavor, but it's not a must.
02 - Small or waxy potatoes—like baby or Yukon Gold—hold up much better while slow-cooking than starchy ones.
03 - Fresh herbs like thyme and rosemary will really make the sauce pop if you've got them on hand.
