Cajun Shrimp with Vegetables (Printable Version)

Tender Cajun shrimp and sautéed peppers blend vibrant flavors with fresh lime and cilantro in this quick dish.

# Ingredients Required:

→ Marinade

01 - 60 ml olive oil
02 - 4 cloves garlic, minced
03 - 15 ml lime juice (from ½ lime)
04 - 1 tablespoon Cajun spice
05 - ½ teaspoon salt

→ Vegetables

06 - 2 bell peppers, sliced 8 mm thick
07 - ½ medium onion, sliced 8 mm thick

→ Shrimp

08 - 450 g large shrimp, peeled and deveined

→ To Serve

09 - 8 small flour tortillas
10 - 15 g cilantro, chopped
11 - 2–3 teaspoons lime juice (from ½ lime)
12 - Jalapeño ranch dressing, to taste
13 - 1 avocado, sliced
14 - 1 lime, cut into wedges

# Guide to Cooking:

01 - Combine olive oil, minced garlic, lime juice, Cajun spice, and salt in a small bowl. Mix until evenly blended.
02 - Slice bell peppers and onion into uniform 8 mm strips. Toss with half of the marinade mixture.
03 - Pat shrimp dry and coat with the remaining marinade.
04 - Sauté shrimp over medium heat for 1–2 minutes per side until opaque. Remove from pan and keep warm.
05 - Sauté marinated peppers and onions for approximately 10 minutes until tender.
06 - Return shrimp to the pan with vegetables, add chopped cilantro and lime juice. Serve alongside tortillas, avocado slices, jalapeño ranch dressing, and lime wedges.
