                Peel the sweet potatoes and cut them into uniform cubes.

                Heat the olive oil in a large skillet over medium heat. Add the sausage and cook, turning occasionally, until browned, about 5 to 7 minutes.

                Add the cubed sweet potatoes to the skillet. Stir to combine and cook for an additional 5 minutes.

                In a small bowl, whisk together the honey, minced garlic, soy sauce or tamari, paprika, salt, and black pepper.

                Pour the honey garlic sauce over the sausage and sweet potatoes. Stir well to coat. Cover the skillet and simmer over medium-low heat for 10 minutes, or until sweet potatoes are tender.
