Category: Sweet Finishes & Fresh-Baked Joy

These red velvet truffles combine a rich, tender crumb of red velvet cake with softened cream cheese to create a smooth, pliable dough. After chilling to firm each ball, they’re dipped in luscious white chocolate to form a creamy outer shell. A final drizzle of dark or semi-sweet chocolate adds a subtle bittersweet contrast. These red velvet truffles are the perfect treat when you want something rich and indulgent without the fuss of decorating a full cake. They come together smoothly and taste like a velvety bite of pure delight that’s perfect for sharing or savoring solo.

I first made these on a whim when I wanted something special for a gathering and they disappeared before the party even started

Ingredients

  • One box of red velvet cake mix: plus whatever the box calls for, which keeps it simple and reliable. Choose a cake mix known for its bright red hue and moist texture
  • Eight ounces of softened cream cheese: for rich, smooth texture make sure it’s at room temperature for easier mixing
  • Sixteen ounces of white chocolate: which coats the truffles in a sweet, silky shell. Pick good quality white chocolate for best melting and flavor
  • Two ounces of dark or semi-sweet chocolate: for drizzling adds a nice contrast and a touch of bitterness. Select a chocolate that melts smoothly without seizing
  • Optional sprinkles or crushed peppermint: to customize the look and add texture. Fresh crushed peppermint makes a lovely holiday flair

Instructions

Build The Cake Base:
Bake the red velvet cake exactly as the box instructs using a 9 by 13 inch pan. Let the cake cool completely because warm cake will cause the mixture to be sticky and hard to work with
Crumble The Cake:
Use your hands or a fork to break the cooled cake into very fine crumbs in a large bowl. Smaller crumbs blend better for smoother truffles
Incorporate The Cream Cheese:
Add the softened cream cheese to the cake crumbs. Combine thoroughly by hand or with a spatula until you get a uniform dough-like consistency without lumps. This ensures every truffle holds together nicely
Shape The Truffles:
Scoop about one tablespoon of the mixture and roll it into a tight ball. Aim for even-sized truffles so they bake and set uniformly. Place them on a parchment-lined baking sheet
Chill The Truffles:
Refrigerate the truffle balls for at least 30 minutes to firm them up. This step is key to prevent breakage when dipping
Prepare The White Chocolate Coating:
Melt the white chocolate gently in 30-second bursts in the microwave, stirring between intervals until completely smooth. Overheating can cause it to seize, so take your time
Dip And Coat:
Using a fork, dip each truffle into the melted white chocolate. Let excess chocolate drip back into the bowl before gently placing the coated truffle on parchment paper. This coating forms the shiny exterior
Set The Coating:
Refrigerate the tray again for 15 to 20 minutes so the white chocolate hardens fully before decorating
Add The Dark Chocolate Drizzle:
Melt the dark chocolate and transfer it into a sandwich bag with a small cut at the tip. Drizzle over the white chocolate-coated truffles to add contrast and a professional touch
Final Chill:
Put the truffles back in the fridge until the drizzle firms up. Then they are ready to serve or store for later

Storage tips

Store these truffles in an airtight container in the refrigerator. They will keep well for up to one week but honestly they rarely last that long in my house

Ingredient swaps

If you want to skip the boxed cake mix try making your own red velvet cake base from scratch with cocoa, vinegar, and buttermilk for a more homemade touch
