In a large mixing bowl, thoroughly combine pumpkin puree, brown sugar, cinnamon, nutmeg, ginger, and salt until smooth. Taste and adjust seasoning as needed.

Preheat oven to 190°C. On a lightly floured surface, unroll pie crusts and cut into 10-12 cm diameter circles using a round cutter.

Place one tablespoon of filling in the center of each dough circle. Fold dough over to form a half-moon shape and firmly seal edges by pressing with a fork.

Arrange pasties on a parchment-lined baking sheet. If desired, brush with beaten egg for a glossy finish. Bake for 25-30 minutes or until golden brown.
