Set the oven temperature to 90°C (200°F).

Line two large baking trays with parchment paper or silicone baking mats.

Wash and thinly slice the apples to approximately 3 mm thickness using a mandoline slicer, removing seeds from each slice.

Arrange apple slices in a single layer on the prepared baking sheets and evenly sprinkle ground cinnamon over both sides.

Bake apple slices for 1 hour at 90°C.

Flip all apple slices over carefully and bake for an additional hour at the same temperature.

Turn off the oven and allow the apple slices to cool inside for about 30 minutes; if not sufficiently crisp, continue baking in 15-minute intervals until desired texture is reached.

Remove the apple chips from trays and serve immediately or store in an airtight container to retain crispness.
