Cowboy Butter Chicken Pasta (Printable Version)

# Ingredients Required:

→ Cowboy Butter

01 - 115 g unsalted butter, softened
02 - 15 ml Dijon mustard
03 - 2 cloves garlic, finely minced
04 - 15 ml chopped fresh parsley
05 - 15 ml chopped fresh chives
06 - 10 ml fresh thyme leaves
07 - 5 ml sweet paprika
08 - 5 ml salt
09 - Pinch of red pepper flakes
10 - Juice and zest of half a lemon

→ Pasta and Seasoning

11 - 340 g linguine pasta
12 - 10 ml salt for pasta water

→ Chicken

13 - 6 skinless, boneless chicken thighs
14 - 5 ml salt
15 - 5 ml paprika
16 - 5 ml garlic powder
17 - 2.5 ml ground black pepper
18 - 15 ml olive oil

→ Vegetables and Sauce

19 - 1 large shallot, finely diced
20 - 150 g mixed sliced bell peppers (red, yellow, orange)
21 - 4 cloves garlic, sliced
22 - 60 g prepared cowboy butter
23 - 120 ml heavy cream
24 - 20 g freshly grated Parmesan cheese
25 - 30 ml finely chopped fresh parsley

# Guide to Cooking:

01 - Combine butter, Dijon mustard, minced garlic, parsley, chives, thyme leaves, paprika, salt, red pepper flakes, and lemon juice and zest in a small bowl. Set aside or refrigerate until needed. Use about half of this for the dish.
02 - Boil a large pot of salted water. Add linguine and cook until al dente according to package instructions. Reserve some pasta water, then drain.
03 - Cut chicken thighs into strips or bite-sized pieces. Season with paprika, garlic powder, salt, and black pepper.
04 - Heat olive oil in a large skillet over medium-high heat. Quickly sear chicken pieces for approximately 4 minutes, not cooking through completely.
05 - Reduce heat to medium. Add diced shallot, sliced garlic, and bell peppers to the skillet. Stir frequently and cook until vegetables are softened and chicken is fully cooked.
06 - Stir in the prepared cowboy butter. Add the cooked linguine and toss to coat thoroughly in the buttery sauce.
07 - Pour in heavy cream, add grated Parmesan and chopped parsley. Stir well and adjust seasoning to taste.
08 - Serve immediately with lemon wedges, extra Parmesan, and optionally garlic bread on the side.

# Extra Suggestions:

01 - Cowboy butter can be prepared in advance and refrigerated. Reserving pasta water helps adjust sauce consistency. Season to taste.
