Preheat oven to 190°C and grease a baking dish with nonstick cooking spray.

Cook the finely chopped onion over medium heat until softened, approximately 5 minutes.

In a large bowl, blend cottage cheese, sautéed onion, chopped spinach, eggs, garlic powder, salt, black pepper, and half of the shredded cheddar cheese.

Pour the mixture into the prepared baking dish. Sprinkle the remaining cheddar cheese evenly on top. Bake for 30 to 35 minutes until set and golden.
