Preheat the oven to 175°C. Grease a 23x23 cm baking dish.

In a large bowl, whisk the eggs until light and fluffy.

Add the full-fat cottage cheese to the eggs and mix until well combined.

Stir in the chopped spinach, diced bell pepper, chopped onion, garlic powder, onion powder, salt, and black pepper. Mix thoroughly.

Fold in most of the shredded cheddar cheese, reserving a portion for topping.

Pour the mixture into the prepared baking dish and sprinkle the reserved cheddar cheese evenly over the top.

Bake in the preheated oven for 40-45 minutes, or until the center is set and the top is lightly golden.

Allow to cool for 5 minutes before slicing. Garnish with fresh herbs and optionally with sliced tomatoes or avocado.
