Cottage Cheese Egg Bake (Printable Version)

Wholesome blend of eggs, cottage cheese, cheddar, and veggies baked until golden and fluffy.

# Ingredients Required:

→ Egg mixture

01 - 6 large eggs
02 - 120 g full-fat cottage cheese

→ Vegetables

03 - 30 g chopped fresh spinach
04 - 75 g diced bell pepper
05 - 60 g chopped onion

→ Cheese

06 - 110 g shredded cheddar cheese

→ Spices

07 - 0.5 tsp garlic powder
08 - 0.5 tsp onion powder
09 - 0.5 tsp salt
10 - 0.25 tsp ground black pepper

→ Garnishes (optional)

11 - Fresh herbs
12 - Sliced tomatoes or avocado

# Guide to Cooking:

01 - Preheat the oven to 175°C. Grease a 23x23 cm baking dish.
02 - In a large bowl, whisk the eggs until light and fluffy.
03 - Add the full-fat cottage cheese to the eggs and mix until well combined.
04 - Stir in the chopped spinach, diced bell pepper, chopped onion, garlic powder, onion powder, salt, and black pepper. Mix thoroughly.
05 - Fold in most of the shredded cheddar cheese, reserving a portion for topping.
06 - Pour the mixture into the prepared baking dish and sprinkle the reserved cheddar cheese evenly over the top.
07 - Bake in the preheated oven for 40-45 minutes, or until the center is set and the top is lightly golden.
08 - Allow to cool for 5 minutes before slicing. Garnish with fresh herbs and optionally with sliced tomatoes or avocado.

# Extra Suggestions:

01 - For a lower-fat option, substitute cottage cheese with a low-fat version and reduce cheddar cheese. This dish can be prepared in advance and reheated. Additional vegetables like mushrooms or zucchini can be added for variety.
