Apple Fritter Bites (Printable Version)

# What You'll Need:

→ Base Batter

01 - 1 1/2 cups Honeycrisp or Gala apples, diced up tiny (about 2 medium ones)
02 - 1/2 cup unsweetened applesauce
03 - 1/2 teaspoon vanilla extract
04 - 1 large egg
05 - 1/4 cup granulated sugar
06 - 1/4 cup unsalted butter, melted
07 - 2 teaspoons ground cinnamon
08 - 1/2 teaspoon kosher salt
09 - 2 teaspoons baking powder
10 - 1 1/2 cups all-purpose flour
11 - Nonstick spray, so your pan won’t stick

→ Apple Cider Glaze

12 - 1/3 cup plus 2 tablespoons apple cider or apple juice
13 - 2 cups powdered sugar

# How to Make It:

01 - Brush that leftover glaze on top of the warm bites. Let ’em chill for about 15 minutes until the glaze kind of dries up.
02 - Put the oven broiler on high. Slip those glazed bites back in and broil for just a couple minutes (2–4 should do it). Keep an eye on them and spin the pan every so often so the tops caramelize, not burn.
03 - Once you pull the hot fritter bites out, brush some of your glaze right over the tops. Don’t worry if it drips down the sides!
04 - As the fritter bites are in the oven, mix apple cider (or juice) and powdered sugar in a bowl. Whisk until it’s nice and runny.
05 - Pop the tray in that hot oven. In around 10 minutes, the bites should puff up and firm up.
06 - Scoop out tablespoon-sized blobs of batter and plop them on your greased pan. Space them out so they don’t join together.
07 - Stir the diced apples into your batter real gently. Make sure they’re spread out everywhere; don’t overmix.
08 - Now, dump your dry mix into the wet. Stir slow, just until you can’t see any more dry bits. Don’t fuss with it too much.
09 - Grab a large bowl and beat together the melted butter and sugar until they’re one. Whisk in the egg, your vanilla, and applesauce. When the mix looks smooth, you’re set.
10 - In another regular bowl, whisk up your flour, baking powder, salt, and cinnamon until everything looks even.
11 - Switch the oven on to 400°F. Spray a baking sheet all over with nonstick spray so nothing sticks.
