Chocolate Cookie Bliss (Printable Version)

# What You'll Need:

→ Cookie Dough

01 - 240g soft, diced unsalted butter
02 - 135g brown sugar (light variety)
03 - 100g white sugar
04 - 2 eggs (large size)
05 - 120g cake flour (homemade)
06 - 180g plain flour
07 - 1 teaspoon powder for baking
08 - 1 teaspoon soda for baking
09 - 0.5 teaspoon salt from the sea
10 - 250g walnuts (whole halves)
11 - 350g chunky chocolate pieces or big chips

# How to Make It:

01 - Set your oven to 200°C (400°F) and let it warm up.
02 - Toss the soft butter chunks in a bowl and start beating slowly. Dump in both sugars and mix at medium speed till smooth and creamy, for about a minute.
03 - Drop the eggs into your butter-sugar mix and beat for around 30 seconds at medium speed, just till they blend in.
04 - Stop the mixer. Throw in homemade cake flour, plain flour, powder for baking, soda for baking, and sea salt. Turn mixer to low till everything's mixed together.
05 - Use a rubber spatula to gently fold the walnuts and chocolate pieces into your batter until they're spread out evenly.
06 - Split your dough into 8 equal balls, about 170g each. Just roughly shape them with your hands without pressing them flat.
07 - Put 4 dough balls on each baking tray and stick them in the oven for 11 minutes. They should look a bit golden on top and bottom. Don't leave them in too long!
08 - Let your cookies sit for 15 minutes to cool down before you dig in.

# Additional Tips:

01 - Make your own cake flour by mixing 120g plain flour with 2 tablespoons cornstarch, then sift it 3-4 times till it's super light.
02 - Want something different? Swap out milk chocolate for dark chocolate bits or chunky pieces.
