Zesty Chicken Taco Feast (Printable Version)

# What You'll Need:

→ Zesty Lime Mixture

01 - 4 chicken thighs without skin or bones (about 1 pound)
02 - 2 tablespoons freshly cut cilantro
03 - Two limes, juiced and zested
04 - 1 teaspoon salt
05 - 1 teaspoon chili powder
06 - 1 teaspoon cumin
07 - ½ teaspoon garlic powder
08 - ½ teaspoon ground coriander
09 - 1 tablespoon oil

→ Taco Fixings

10 - Tortillas
11 - Pico de gallo
12 - Cheese
13 - Fresh cilantro

# How to Make It:

01 - Combine oil with lime juice, zest, cilantro and all seasonings in a bowl. Toss chicken into a sealable container or bag, dump the mixture on top, and give it a good shake to cover everything. Let it sit for at least 30 minutes, but two hours works even better.
02 - Fire up your grill or get your campfire going for cooking.
03 - Take chicken out of the mixture and throw it on the hot grill. Cook until it hits 165°F inside, flipping now and then so it cooks evenly (about 5-8 minutes each side). After it's done, chop it into small chunks.
04 - Stack your tortillas with the chopped chicken, some pico de gallo, a bit of cheese, and fresh cilantro leaves. You can warm the tortillas on the grill first if you want. Eat them right away.
