Combine oil with lime juice, zest, cilantro and all seasonings in a bowl. Toss chicken into a sealable container or bag, dump the mixture on top, and give it a good shake to cover everything. Let it sit for at least 30 minutes, but two hours works even better.

Fire up your grill or get your campfire going for cooking.

Take chicken out of the mixture and throw it on the hot grill. Cook until it hits 165°F inside, flipping now and then so it cooks evenly (about 5-8 minutes each side). After it's done, chop it into small chunks.

Stack your tortillas with the chopped chicken, some pico de gallo, a bit of cheese, and fresh cilantro leaves. You can warm the tortillas on the grill first if you want. Eat them right away.
