Put parchment paper or a silicone mat on a baking sheet and leave it aside.

Cut apples vertically into 4 or 5 pieces, about 1/2-inch thick. Take out the seeds and stems with a melon baller and small knife without going all the way through.

Stick a food-safe wooden popsicle stick (10 mm wide) into the bottom of each slice, pushing halfway in. Make a small cut first with your knife if needed.

Heat the dark or milk chocolate wafers using a double boiler or in your microwave following package directions. Make sure apple slices are completely dry before dipping for better sticking.

Submerge each slice into the melted chocolate, going just beyond the stick. Shake off extra chocolate and place them on your prepared tray without touching. Chill for 5-10 minutes until firm.

Combine heavy cream and caramel squares in a bowl safe for microwaving. Heat on high for 20-30 seconds at a time, stirring between until it's all smooth. Let it cool a bit.

If using, melt the extra chocolate wafers and let both chocolate and caramel cool till they're warm but still runny. Pour caramel first, then chocolate over the slices. Quickly add your favorite toppings.

Put apple slices in the fridge for 10-15 minutes until everything hardens up. They taste best if eaten within a few hours. Keep in the fridge until you're ready to eat them.
