Preheat the grill to medium-high heat. If using a grill pan, lightly brush or spray it with olive oil.

Stand each zucchini upright and use a vegetable peeler to shave thin ribbons from top to base. Arrange the ribbons in a single layer on a baking sheet or cutting board.

Brush lemon-garlic butter over one side of the ribbons. Fold each slice accordion-style, then skewer through the center. Place prepared skewers on a baking sheet or grill pan.

Brush all skewers with an additional layer of lemon butter before grilling.

Grill the skewers for 2 to 3 minutes per side, rotating the skewers three times to ensure even cooking, totaling approximately 6 to 9 minutes.

Remove from grill, optionally brush more lemon butter, sprinkle fresh herbs over the skewers, and serve either on skewers or plated.
