Grilled Zucchini Ribbon Skewers (Printable Version)

Thin zucchini and squash ribbons brushed with lemon-garlic butter and grilled to perfection with fresh herbs.

# Ingredients Required:

β†’ Vegetables

01 - 2 medium zucchini squash
02 - 2 medium summer squash

β†’ Herbs & Spices

03 - 3 tablespoons chopped fresh parsley and basil
04 - 2 teaspoons fresh lemon zest
05 - ΒΌ teaspoon crushed red pepper flakes
06 - Pinch of salt and black pepper

β†’ Condiments

07 - 170 grams unsalted butter
08 - 3 garlic cloves, minced

# Guide to Cooking:

01 - Preheat the grill to medium-high heat. If using a grill pan, lightly brush or spray it with olive oil.
02 - Stand each zucchini upright and use a vegetable peeler to shave thin ribbons from top to base. Arrange the ribbons in a single layer on a baking sheet or cutting board.
03 - Brush lemon-garlic butter over one side of the ribbons. Fold each slice accordion-style, then skewer through the center. Place prepared skewers on a baking sheet or grill pan.
04 - Brush all skewers with an additional layer of lemon butter before grilling.
05 - Grill the skewers for 2 to 3 minutes per side, rotating the skewers three times to ensure even cooking, totaling approximately 6 to 9 minutes.
06 - Remove from grill, optionally brush more lemon butter, sprinkle fresh herbs over the skewers, and serve either on skewers or plated.

# Extra Suggestions:

01 - Use a vegetable peeler or mandolin for uniform, thin ribbons. Adjust crushed red pepper flakes to preferred heat level. Lemon butter can be applied after grilling for enhanced flavor.
