Spray the interior of the Crockpot liner with non-stick cooking spray to prevent sticking and facilitate cleanup.

Place chicken breasts in a single layer at the bottom of the Crockpot. Sprinkle taco seasoning evenly over the chicken. Arrange diced cream cheese and cubed queso cheese on top, then pour the Rotel evenly over the mixture.

Cover the Crockpot with the lid. Cook on HIGH for 3 hours or on LOW for 7 hours until the chicken is tender and cheeses have melted completely.

Remove the lid carefully. Using two forks, shred the chicken directly in the Crockpot. Stir all ingredients thoroughly until fully combined and creamy.

Sprinkle chopped green onion tops over the dip if desired. Serve warm with tortilla chips or alongside rice or tortillas as a main accompaniment.
