A spicy-sweet blend of honey-coated mixed nuts roasted to a glossy, crunchy finish.

# Ingredients Required:

→ Mixed Nuts

01 - 85 g cashews
02 - 85 g almonds
03 - 85 g pecans
04 - 85 g walnuts
05 - 115 g peanuts

→ Binding and Sweetener

06 - 1 large egg white
07 - 170 g honey

→ Spices and Seasonings

08 - 9 g kosher salt
09 - 2 g ground cumin
10 - 2 g ground cinnamon
11 - 1 g chili powder
12 - 1 g red pepper flakes
13 - 1 g cayenne pepper
14 - 0.5 g cracked black pepper
15 - 0.5 g ground ginger
16 - 0.5 g ground cloves

# Guide to Cooking:

01 - Set the oven to 120°C and line a large baking sheet with a silicone mat or parchment paper.
02 - Whip the egg white in a medium bowl until frothy, then add all mixed nuts and toss thoroughly to coat.
03 - Pour in honey along with all listed spices and salt; mix until nuts are evenly coated with the glaze and seasoning.
04 - Spread the coated nuts evenly on the prepared baking sheet. Roast in the oven for 45 to 60 minutes, stirring every 15 minutes until glossy and lightly browned.
05 - Remove nuts from the oven and allow to cool completely, about 10 minutes. Once cooled, break into clusters and store in an airtight container in a cool, dry place for up to two weeks.

01 - Peanuts can be omitted for a Paleo-friendly option.
02 - For milder heat, reduce cayenne pepper to 0.5 g.
03 - Ensure nuts are fully cooled before storage to maintain crunchiness.
