Set the oven to 120°C and line a large baking sheet with a silicone mat or parchment paper.

Whip the egg white in a medium bowl until frothy, then add all mixed nuts and toss thoroughly to coat.

Pour in honey along with all listed spices and salt; mix until nuts are evenly coated with the glaze and seasoning.

Spread the coated nuts evenly on the prepared baking sheet. Roast in the oven for 45 to 60 minutes, stirring every 15 minutes until glossy and lightly browned.

Remove nuts from the oven and allow to cool completely, about 10 minutes. Once cooled, break into clusters and store in an airtight container in a cool, dry place for up to two weeks.
