Turkish flatbread with fillings (Printable Version)

# Ingredients Required:

→ Dough

01 - 375 grams all-purpose flour
02 - 85 milliliters extra virgin olive oil
03 - 185 milliliters water
04 - 0.5 teaspoon salt

→ Spinach Feta Filling

05 - 300 grams baby spinach
06 - 2 cloves garlic, minced
07 - 2 whole eggs
08 - 1 teaspoon black pepper
09 - 300 grams Danish feta
10 - 200 grams shredded mozzarella cheese

→ Lamb or Beef Filling

11 - 15 milliliters olive oil
12 - 2 cloves garlic, minced
13 - 1 onion, finely chopped
14 - 500 grams beef or lamb mince
15 - 1 capsicum, chopped
16 - 90 grams baby spinach
17 - 1.5 teaspoons ground cumin
18 - 1 teaspoon paprika
19 - 0.5 teaspoon cayenne pepper
20 - 0.75 teaspoon salt
21 - 0.75 teaspoon black pepper
22 - 15 milliliters water
23 - 120 grams Danish feta, crumbled

24 - 1 to 1.5 tablespoons olive oil per flatbread

# Guide to Cooking:

01 - Combine flour, olive oil, salt, and water in the bowl of a stand mixer fitted with a dough hook. Mix on medium-high speed for 2.5 minutes until the dough is smooth and pliable.
02 - Cover the dough and allow to rest at room temperature for 20 minutes.
03 - Lightly flour the work surface and divide the dough into four equal pieces. Roll out each piece into a rectangle measuring approximately 35 by 20 centimeters.
04 - Heat olive oil in a skillet over high heat. Sauté garlic and onion for 1 minute, then add chopped capsicum and cook for an additional 2 minutes. Add minced meat and cook until well browned, breaking it up as it cooks. Stir in cumin, paprika, cayenne pepper, salt, black pepper, and water. Cook for 2 more minutes, then add baby spinach and stir until wilted. Remove from heat and let cool before use.
05 - In a mixing bowl, combine baby spinach, minced garlic, eggs, and black pepper. Massage the mixture by hand until the spinach volume reduces. Fold in crumbled feta cheese and mix evenly.
06 - Spread the chosen filling evenly over half of each rolled dough piece, extending to the edges. For the Lamb or Beef variant, sprinkle crumbled feta over the filling. For the Spinach Feta variant, sprinkle shredded mozzarella over the filling. Fold the other half of the dough over the filling and press down the edges firmly to seal, using a little water if necessary to close any gaps and expel air pockets.
07 - Dust a pizza paddle or flat surface with flour and transfer the assembled flatbread onto it.
08 - Heat 1.5 tablespoons of olive oil in a skillet over medium-high heat. Slide the flatbread into the skillet and cook for about 3 minutes, pressing lightly until the underside is golden and crispy. Flip and cook the other side until similarly crisp.
