# Ingredients Required:

01 - 15 ml coconut oil

02 - 450 g ground turkey
03 - 12 large eggs

04 - 1 small sweet potato (approximately 150 g)
05 - 30 g baby spinach
06 - 2.5 ml paprika
07 - 2.5 ml garlic powder

# Guide to Cooking:

01 - Preheat the oven to 190°C and grease a 23 x 23 cm baking dish with coconut oil; set aside.
02 - Peel and thinly slice the sweet potato into 6 mm thick pieces. Arrange them in a single layered base in the prepared baking dish, allowing slight overlap.
03 - Heat 15 ml coconut oil in a medium skillet over medium heat. Add ground turkey, breaking it apart, and season with paprika and garlic powder. Cook until browned, about 3 to 5 minutes. Drain excess fat and spread the cooked turkey evenly over the sweet potato layer.
04 - In a medium bowl, whisk eggs until homogeneous. Incorporate paprika, garlic powder, and adjust salt and pepper to taste. Pour this mixture over the ground turkey layer evenly.
05 - Place the baking dish in the oven and bake for 30 minutes. Carefully remove the dish without turning off the oven, evenly distribute baby spinach over the top, then return the dish to the oven. Continue baking for an additional 10 to 15 minutes until the center is set and firm, total baking time approximately 40 to 45 minutes.
