12 - 22 ml lime juice (1 lime)

13 - 450 g medium shrimp, peeled and deveined

# Guide to Cooking:

01 - Heat the oil in a large stockpot over medium heat. Add diced onion and cook until fragrant. Stir in minced garlic, ginger, lemongrass, and red curry paste; cook for 1 minute to release aromas.
02 - Pour the chicken or vegetable broth into the pot, stirring continuously. Add fish sauce. Reduce heat and simmer for 10 minutes to develop flavors.
03 - Stir in the coconut milk, then add sliced shiitake mushrooms. Cook and stir until mushrooms soften, approximately 5 minutes.
04 - Add peeled and deveined shrimp to the pot. Cook until shrimp turn opaque and are fully cooked, about 5 minutes.
05 - Stir in lime zest and lime juice. Season with sea salt to taste. Serve garnished with fresh cilantro, sliced scallions, and lime wedges.
