Heat a large skillet over medium heat. Add the ground beef and cook until browned, breaking it up with a spatula. Drain any excess grease.

Add the taco seasoning and ½ cup water to the cooked beef. Simmer for 5 minutes, stirring occasionally, until the sauce thickens.

Carefully slice open the baked potatoes and fluff the insides with a fork to create a bed for toppings.
