Nacho Bell Fries (Printable Version)

# What You'll Need:

→ Fries

01 - Pack of extra crunchy frozen French fries, 450g
02 - Some vegetable oil to deep-fry

→ Seasoning Mixture

03 - Two teaspoons of fine salt
04 - Two teaspoons chili powder
05 - A quarter teaspoon cayenne if you’re up for heat
06 - A teaspoon each of garlic powder and onion powder
07 - Two tablespoons paprika

→ Cheese Sauce

08 - One tablespoon juice from a jar of pickled jalapeños
09 - Sixteen slices of American cheese (the melty kind)
10 - 60ml full-fat milk

# How to Make It:

01 - Pile those spicy fries on a platter and keep your cheese dip nice and hot on the side so everyone can dig in.
02 - Dump your piping hot fries into a giant bowl and toss in your seasoning, swishing until coated all over.
03 - Break the cheese slices up, toss them with milk and jalapeño juice in a microwave-safe bowl, and nuke for 30-second bursts, stirring after every round until silky.
04 - Carefully put your fries into the bubbling oil and leave them for 6–8 minutes. Once they’re super crisp and brown, lift them out with a slotted spoon. Let them chill on some towels for a sec.
05 - Pour enough oil into your deep pan so fries will be totally covered—about 7.5cm deep is great. Fire up your stove and watch the temperature with a thermometer until it hits 180°C.
06 - Grab a little bowl and dump in chili powder, cayenne if you’re feeling it, paprika, some salt, garlic, and onion powders. Stir till it’s all mixed up and even.

# Additional Tips:

01 - Watch your oil temp! If it drops, fries lose their crunch. These are best scarfed down hot.
