Dump your piping hot fries into a giant bowl and toss in your seasoning, swishing until coated all over.

Break the cheese slices up, toss them with milk and jalapeño juice in a microwave-safe bowl, and nuke for 30-second bursts, stirring after every round until silky.

Carefully put your fries into the bubbling oil and leave them for 6–8 minutes. Once they’re super crisp and brown, lift them out with a slotted spoon. Let them chill on some towels for a sec.

Pour enough oil into your deep pan so fries will be totally covered—about 7.5cm deep is great. Fire up your stove and watch the temperature with a thermometer until it hits 180°C.

Grab a little bowl and dump in chili powder, cayenne if you’re feeling it, paprika, some salt, garlic, and onion powders. Stir till it’s all mixed up and even.
