Preheat oven to 200°C. On a floured surface, roll out thawed puff pastry to approximately 3 mm thickness. Cut into rectangles or squares as desired.

Combine sliced strawberries with granulated sugar in a bowl. Allow to rest for 15 minutes until juices are released.

Arrange pastry pieces on a lined baking sheet. Bake for 15–20 minutes until golden brown and puffed.

While pastries cool, whip cold heavy cream with powdered sugar and vanilla extract until soft peaks form.

Fill cooled pastry shells with macerated strawberries and top with whipped cream frosting.
