Spinach Artichoke Melt (Printable Version)

Creamy spinach and artichoke hearts with melted cheese grilled between crispy bread slices.

# Ingredients Required:

→ Dairy and Cheese

01 - 2 tablespoons unsalted butter, plus extra for spreading on bread
02 - 2 ounces cream cheese
03 - 6 ounces shredded mozzarella cheese
04 - 5 ounces shredded sharp cheddar and/or white cheddar cheese
05 - 2 ounces grated Parmesan cheese

→ Vegetables and Aromatics

06 - 2 garlic cloves, minced
07 - 60 ml (1/4 cup) chopped onion
08 - 60 ml (1/4 cup) finely chopped peperoncini
09 - 425 grams (15 ounces) canned artichoke hearts, drained and cut into large chunks
10 - 225 grams (8 ounces) fresh baby spinach

→ Seasonings and Bread

11 - 1/4 teaspoon salt, or to taste
12 - 1/4 teaspoon ground black pepper
13 - 8 slices sourdough, country, or white bread

# Guide to Cooking:

01 - Melt 2 tablespoons of butter in a skillet over medium-low heat. Add minced garlic and chopped onion, cooking for 3 to 4 minutes until the onion becomes translucent without burning the garlic.
02 - Add finely chopped peperoncini and cook for an additional 2 minutes. Stir in cream cheese until fully melted and combined.
03 - Mix in artichoke hearts, fresh spinach, salt, and black pepper. Cook while stirring frequently for about 4 minutes until the spinach wilts. Cover with a lid to hasten wilting if desired. Remove from heat and allow to cool slightly.
04 - Stir shredded mozzarella, cheddar, and grated Parmesan into the cooled spinach mixture until evenly incorporated.
05 - Butter one side of each bread slice. Spread approximately 80 ml (1/3 cup) of the spinach-cheese mixture on the unbuttered side of half the slices. Top with remaining bread slices, butter-side up.
06 - Heat a skillet or grill pan over medium-low heat. Cook sandwiches in batches, flipping carefully, until each side is golden brown and the filling is warmed and melted, about 6 minutes per sandwich. Cut in half and serve immediately.
