Parmesan Chicken with Creamy Sauce (Printable Version)

# What You'll Need:

01 - 1 pound thin chicken slices or strips
02 - 1 cup crunchy Panko crumbs
03 - 1 1/2 cups freshly shredded parmesan
04 - 4 tablespoons good quality olive oil
05 - Sea salt and cracked pepper, as needed
06 - 1 pound pasta shapes (short variety)
07 - 1 medium onion (yellow), diced
08 - 2 colorful bell peppers, diced
09 - 3 garlic cloves, minced or finely grated
10 - 3-4 teaspoons spicy cajun mix
11 - Red pepper flakes, as needed
12 - 2 cups regular milk
13 - 1/2 cup thick cream or coconut milk (canned)
14 - 2 ounces soft cream cheese (room temp)
15 - 2 tablespoons fresh chopped parsley

# How to Make It:

01 - Fill a big pot with salty water and bring it to a rolling boil. Toss in your pasta and follow the box times for al dente texture. Drain in a colander when done.
02 - Grab a flat dish and mix your Panko with 1/2 cup parmesan. Press your chicken into this mixture on both sides so it sticks well. Put aside for now.
03 - Pour 2 tablespoons olive oil into a wide pan over medium-high flame. Toss in diced onion and let it cook until soft, about 5 minutes. Add your diced peppers and garlic, cooking another 5 minutes till peppers soften. Sprinkle in cajun spices, pepper flakes, salt and pepper, and stir for a minute till you smell the spices. Pour milk and cream into the pan, then drop in cream cheese. Keep whisking till everything's smooth, then let it bubble gently for 5-8 minutes till it thickens a bit.
04 - Pour your other 2 tablespoons olive oil into another big pan on medium-high heat. Drop in your coated chicken and let it sizzle for 3-4 minutes per side till it turns golden brown. Move chicken to a cutting board, sprinkle with salt, and cut into thin strips.
05 - Dump the leftover parmesan into your sauce and then toss in your drained pasta. Let it all warm up for 3-5 minutes on low heat till pasta gets fully coated. Turn off the heat and mix in fresh parsley.
06 - Scoop the creamy pasta onto plates and lay the chicken strips on top. Grab a fork and dig in while it's hot!

# Additional Tips:

01 - You can whip up your own cajun spice blend at home by mixing some smoky paprika, garlic and onion powders, dried oregano and thyme, regular chili powder, spicy cayenne, sea salt, and black pepper.
