Southern Breakfast Enchiladas Gravy (Printable Version)

# Ingredients Required:

→ Enchiladas

01 - 6 large flour tortillas
02 - 1 tablespoon unsalted butter
03 - 6 large eggs
04 - 1/4 cup whole milk
05 - Salt to taste
06 - Freshly ground black pepper to taste
07 - 4 oz sharp cheddar cheese, shredded
08 - 2 oz Monterey Jack cheese, shredded
09 - 4 oz cooked breakfast potatoes or hashbrowns (optional)
10 - 2 green onions, thinly sliced

→ Sausage gravy

11 - 8 oz pork breakfast sausage
12 - 2 tablespoons all-purpose flour
13 - 1 1/2 cups whole milk
14 - Salt to taste
15 - Freshly ground black pepper to taste
16 - 1/4 teaspoon garlic powder (optional)

# Guide to Cooking:

01 - Heat a skillet over medium heat and add the pork sausage, breaking it apart as it cooks until browned and fully cooked. Sprinkle the flour over the sausage and stir to coat evenly. Cook for one minute while stirring constantly. Gradually add the milk, stirring continuously to prevent lumps. Simmer for five minutes until the gravy thickens. Season with salt, pepper, and optional garlic powder. Keep warm.
02 - In a bowl, whisk together eggs, milk, salt, and pepper until combined. Melt butter in a non-stick skillet over medium heat, then pour in the egg mixture. Cook gently, stirring frequently, until eggs are just set but still creamy. Remove from heat immediately.
03 - Preheat oven to 190°C (375°F) and lightly grease a 33x23cm (13x9 inch) baking dish. Lay each tortilla flat and fill with scrambled eggs, cooked potatoes if using, green onions, and a generous mixture of both cheeses. Roll tortillas tightly and place seam-side down in the prepared baking dish.
04 - Pour sausage gravy evenly over the rolled tortillas. Optionally, sprinkle additional cheese on top. Cover the dish with foil and bake for 15 minutes. Remove foil and bake for an additional 5 to 10 minutes until hot and bubbly.
05 - Sprinkle more sliced green onions over the enchiladas and serve immediately. These pair well with hot sauce or fresh fruit for a complete breakfast.
