Hearty one pot lasagna soup (Printable Version)

# Ingredients Required:

01 - 225 g lean ground beef
02 - 225 g Italian ground sausage

→ Vegetables and Aromatics

03 - 120 ml yellow onion, chopped
04 - 3 garlic cloves, minced
05 - 3 tablespoons tomato paste
06 - 3 cups fresh baby spinach

→ Liquids and Sauces

07 - 700 ml beef or chicken broth
08 - 680 g red pasta sauce or marinara
09 - 1 teaspoon olive oil

10 - 9 to 10 uncooked lasagna noodles, broken into pieces

→ Cheeses

11 - 120 g shredded parmesan
12 - 250 g fresh ricotta
13 - 100 g shredded mozzarella

→ Spices and Seasonings

14 - 0.25 teaspoon red pepper flakes
15 - 0.25 teaspoon salt, plus more to taste
16 - 0.25 teaspoon ground black pepper
17 - 0.25 teaspoon garlic powder
18 - 0.5 teaspoon crushed dried oregano
19 - 0.5 teaspoon dried thyme

# Guide to Cooking:

01 - Heat olive oil in a pressure cooker over medium heat. Add ground beef and Italian sausage, cooking until evenly browned. Drain any excess fat.
02 - Add chopped yellow onion to the cooked meats and cook until softened. Stir in minced garlic and cook for 30 seconds to release aroma.
03 - Stir in tomato paste and cook for 2 minutes to develop a deeper flavor.
04 - Pour in red pasta sauce, then sprinkle red pepper flakes, salt, black pepper, garlic powder, oregano, and thyme. Stir to evenly combine all ingredients.
05 - Pour in 4 cups of broth and bring the mixture to a boil. Break lasagna noodles into pieces and gradually stir them in to prevent clumping.
06 - Seal the lid and cook under high pressure for 6 minutes. Allow a natural pressure release for 10 minutes before opening the lid.
07 - Stir ricotta and mozzarella into the hot soup until fully incorporated.
08 - Add fresh baby spinach and shredded parmesan, stirring until the spinach wilts. Serve immediately, optionally topped with extra cheese.
