Warm up the olive oil with 1 tbsp butter in a big skillet over medium heat. Toss in your sliced onions with a tiny bit of salt. Cook them, giving an occasional stir, until they turn soft and golden (this'll take around 12-15 minutes). Put them aside when done.

Wash your jasmine rice under cold water till it runs clear to get rid of extra starch. Melt your other tbsp of butter in a pot over medium heat. Add your washed rice and mix it so the butter coats all the grains. Add your broth or water, then mix in salt and pepper. Let it come to a boil, then turn the heat down low, put a lid on it, and let it simmer for 15-18 minutes until the rice feels soft and soaks up all the liquid. Take it off the heat but keep the lid on for another 5 minutes.

Use a fork to fluff up your rice, then gently fold in those yummy browned onions. Sprinkle with fresh parsley if you want. Serve it while it's hot!
