Savory Breakfast Pop-Tarts (Printable Version)

# Ingredients Required:

→ Sausage Gravy

01 - 113 grams breakfast sausage
02 - 16 grams all-purpose flour
03 - 300 milliliters milk
04 - 1/4 teaspoon seasoning salt
05 - 1/2 teaspoon ground black pepper
06 - 1/2 teaspoon minced fresh rosemary (optional)
07 - A pinch of dried sage (optional)

→ Scrambled Eggs

08 - 5 large eggs

→ Dough

09 - 375 grams all-purpose flour
10 - 1 teaspoon salt
11 - 225 grams vegetable shortening
12 - 115 grams unsalted butter
13 - 1 large egg
14 - 15 milliliters white vinegar
15 - 75 milliliters cold water

→ Finishing

16 - 1 large egg (for egg wash)
17 - 2 tablespoons water (for egg wash)
18 - 60 grams shredded cheddar or jack cheese (optional)
19 - Seasoning blend such as Everyday Seasoning or equivalent

# Guide to Cooking:

01 - Heat a skillet over medium heat and cook the sausage until browned. Stir in flour and cook for 1-2 minutes. Gradually whisk in milk, then add seasoning salt, black pepper, rosemary, and sage. Simmer until thickened. Remove from heat and set aside.
02 - In a separate pan, scramble the eggs gently until just set. Remove from heat and keep warm.
03 - In a large bowl, combine flour and salt. Cut in vegetable shortening and butter until mixture resembles coarse crumbs. Whisk together egg, vinegar, and cold water. Add to dry ingredients and mix until dough forms. Chill dough for 15 minutes.
04 - Roll out dough on a lightly floured surface to about 3 mm thickness. Cut into rectangles of desired size. Place a spoonful of sausage gravy and scrambled eggs on half the rectangles, adding cheese if using. Cover with remaining rectangles, seal edges firmly.
05 - Beat the extra egg with water and brush over the top of each pop-tart. Transfer to a baking sheet and bake in a preheated oven at 190°C for 25 minutes or until golden brown.

# Extra Suggestions:

01 - For a richer flavor, add cheese on top of the pop-tarts before baking. Optionally, use a sweeter filling by replacing the sausage gravy and eggs with jam or fruit preserves. Adjust seasoning according to taste.
