Remove any damaged outer leaves from the cabbage and slice it into 1.9 cm thick rounds, leaving the core intact to hold the steaks together.

Combine olive oil, garlic powder, smoked paprika, onion powder, dried thyme, salt, and black pepper in a bowl. Brush this mixture evenly onto both sides of each cabbage steak.

Arrange the cabbage steaks in a single layer on the prepared baking sheet. Roast for 25 to 30 minutes, flipping halfway through, until edges are golden brown and crispy.
