Combine chopped peaches, sugar, and 2 cups water in a saucepan. Bring to a gentle boil, then reduce heat and simmer for 10 minutes until peaches soften and sugar dissolves.

Use an immersion blender or transfer the mixture to a blender and puree until smooth.

Strain the peach puree through a fine mesh sieve into a pitcher, pressing gently with the back of a spoon to extract juice. Discard the solids and allow the liquid to cool completely.

Stir in freshly squeezed lemon juice and the remaining 4 cups of water to the cooled peach syrup. Adjust sweetness or acidity by adding more sugar or lemon juice to taste.
