Cheesy Queso Fundido Melt (Printable Version)

A creamy cheese blend with jalapenos, baked golden and served hot with tortilla chips for dipping.

# Ingredients Required:

→ Sauce

01 - 15 grams unsalted butter
02 - 8 grams all-purpose flour
03 - 240 milliliters whole milk
04 - ½ teaspoon salt
05 - ⅛ teaspoon ground black pepper

→ Cheeses and Peppers

06 - 340 grams Monterey Jack cheese, shredded
07 - 30 grams goat cheese
08 - 15 to 30 grams chopped roasted jalapeños or canned chiles

→ Garnish and Serving

09 - Chopped fresh cilantro
10 - Tortilla chips for serving

# Guide to Cooking:

01 - Preheat the oven to 200°C or set the broiler to high heat.
02 - In a 23-25 cm cast iron skillet over medium heat, melt the butter. Whisk in the flour and cook for about one minute to form a roux. Gradually whisk in the milk and cook for approximately three minutes until the mixture thickens slightly.
03 - Remove the skillet from heat. Immediately stir in the shredded Monterey Jack cheese until melted and smooth. Season with salt and black pepper. Fold in the chopped roasted jalapeños gently. Crumble the goat cheese on top and combine lightly without overmixing.
04 - If baking, place the skillet in the preheated oven and cook for 12 to 15 minutes until the top is golden brown. If broiling, place the skillet under the broiler and cook until the surface browns quickly, watching carefully to prevent burning.
05 - Remove from heat. Sprinkle chopped cilantro over the top and serve immediately with tortilla chips for dipping.
