Cube the bread and layer half in a greased casserole dish. Evenly dot with softened cream cheese, then top with remaining bread cubes to form a thick layer.

Whisk eggs, milk, vanilla extract, maple syrup or sugar, and cinnamon until smooth and well combined.

Pour the custard over the bread and cream cheese layers, pressing gently to help absorption. Cover tightly with plastic wrap or foil and refrigerate for at least 6 hours or overnight.

Preheat the oven to 175°C. Remove cover, dot the top with butter, and bake uncovered for 45 to 55 minutes until golden brown and custard is set; test doneness by inserting a knife in the center which should come out clean.
