One Pot Moroccan Chicken (Printable Version)

# Ingredients Required:

01 - 6 bone-in, skin-on chicken thighs

02 - 1 large onion, diced
03 - 3 cloves garlic, minced

05 - 1 tsp ground coriander
06 - 1 tsp ground turmeric
07 - 1 tsp ground ginger

11 - Salt and freshly ground black pepper, to taste

12 - 2 tbsp olive oil
13 - 240 ml chicken broth
14 - 1 can (411 g) diced tomatoes

15 - 120 g green olives, pitted
16 - 75 g dried apricots, halved
17 - 40 g raisins or sultanas
18 - 60 g almonds, toasted (optional)
19 - Zest and juice of one lemon

→ Legumes

20 - 1 can (425 g) chickpeas, drained and rinsed

→ Garnish

21 - Fresh cilantro or parsley, chopped

# Guide to Cooking:

01 - Heat olive oil in a large pot over medium-high heat. Season chicken thighs with salt and pepper. Place them skin-side down and sear until golden brown, about 5 minutes per side. Remove chicken and set aside.
02 - Add diced onion to the same pot and sauté until translucent, about 3 to 4 minutes. Add minced garlic and cook for an additional minute until fragrant.
03 - Incorporate cumin, coriander, turmeric, ground ginger, paprika, cinnamon, and cayenne pepper into the pot. Toast with the onions and garlic for 1 to 2 minutes until aromatic.
04 - Pour in chicken broth and diced tomatoes, scraping the bottom to loosen browned bits. This will enhance sauce flavor and richness.
05 - Return chicken thighs to the pot. Add green olives, dried apricots, raisins, chickpeas, and toasted almonds if using. Stir to combine thoroughly.
06 - Bring mixture to a gentle boil, reduce heat to low, cover, and simmer for 30 to 35 minutes until chicken is cooked through and tender.
07 - Stir in lemon zest and juice. Adjust seasoning with additional salt and pepper if needed. Garnish with chopped fresh cilantro or parsley before serving.
