Moroccan Tagine with Meatballs (Printable Version)

Hearty tagine with spiced meatballs, rice, and a mix of fresh vegetables cooked until tender.

# Ingredients Required:

→ Meatballs

01 - 500 g ground beef
02 - 120 g onion, finely chopped (divided)
03 - 3 garlic cloves, minced
04 - 1.5 teaspoons salt
05 - 0.5 teaspoon black pepper
06 - 1 teaspoon ground cumin
07 - 1 teaspoon ground paprika
08 - 0.5 teaspoon ground cinnamon

→ Vegetables and Rice

09 - 2 medium carrots, sliced
10 - 1 large zucchini, sliced
11 - 1 large bell pepper, chopped
12 - 400 g canned crushed tomatoes
13 - 200 g long grain rice
14 - 750 ml vegetable broth

→ Other

15 - 2 tablespoons olive oil

# Guide to Cooking:

01 - Heat olive oil in a large heavy pot over medium heat. In a bowl, combine ground beef, half of the chopped onion, garlic, salt, black pepper, cumin, paprika, and cinnamon. Form mixture into small meatballs. Brown meatballs in the pot until golden on all sides, then remove and set aside.
02 - Add the remaining onion, carrots, bell pepper, and zucchini to the same pot. Sauté over medium heat until softened, about 5-7 minutes.
03 - Stir in crushed tomatoes, vegetable broth, and rice. Return meatballs to the pot, cover, and simmer gently until rice is tender and liquid is absorbed, approximately 20-25 minutes.
04 - Remove from heat and let rest briefly before serving to allow flavors to meld.

01 - For best results, use a heavy-bottomed pot to prevent sticking during simmering.
