Mediterranean Steak Bowl (Printable Version)

A hearty bowl with marinated steak, grains, fresh veggies, and herbaceous tzatziki dressing.

# Ingredients Required:

→ Steak and Marinade

01 - 450 g sirloin steak, approx. 2.5 cm thick
02 - 45 ml olive oil
03 - 2 garlic cloves, minced
04 - 15 ml fresh lemon juice
05 - 5 ml dried oregano
06 - 5 ml dried thyme
07 - 2.5 ml salt
08 - 1.25 ml black pepper

→ Bowl Base

09 - 480 ml cooked grains (brown rice, quinoa, or cauliflower rice)
10 - 240 ml roasted chickpeas (optional for paleo or keto diet)

→ Toppings

11 - 240 ml cherry tomatoes, halved
12 - 1 cucumber, diced
13 - 120 ml red onion, thinly sliced
14 - 120 ml pitted kalamata olives
15 - 80 ml crumbled feta cheese (optional for dairy-free)
16 - 60 ml fresh herbs (parsley or dill), chopped

→ Tzatziki

17 - 240 ml plain Greek yogurt (substitute coconut yogurt for dairy-free)
18 - ½ cucumber, grated and squeezed dry
19 - 15 ml fresh lemon juice
20 - 1 garlic clove, minced
21 - 15 ml fresh dill, chopped
22 - Salt and pepper, to taste

→ Lemon Vinaigrette

23 - 45 ml olive oil
24 - 30 ml fresh lemon juice
25 - 5 ml honey (omit for Whole30)
26 - 1 garlic clove, minced
27 - 2.5 ml dried oregano
28 - Salt and pepper, to taste

# Guide to Cooking:

01 - Combine olive oil, minced garlic, lemon juice, oregano, thyme, salt, and black pepper. Coat the sirloin steak evenly and marinate for 30 minutes up to 4 hours in the refrigerator.
02 - Mix Greek yogurt with grated cucumber, lemon juice, minced garlic, fresh dill, salt, and pepper. Chill in the refrigerator until ready to serve.
03 - Whisk together olive oil, lemon juice, honey (optional), minced garlic, oregano, salt, and pepper until emulsified.
04 - Heat a skillet over high heat and sear the marinated steak for 4 to 5 minutes per side until desired doneness. Rest the steak for a few minutes, then slice thinly.
05 - Layer cooked grains, sliced steak, and toppings (cherry tomatoes, cucumber, red onion, olives, feta, fresh herbs) in serving bowls. Drizzle with tzatziki and lemon vinaigrette before serving.
