# Guide to Cooking:

01 - Peel and evenly cut the potatoes; boil in water until fork tender, about 15 minutes.
02 - Drain the potatoes and transfer to a large bowl; mash until smooth using a potato masher.
03 - Incorporate salt, black pepper, garlic powder, cheddar cheese, and cornstarch into the mashed potatoes; mix thoroughly with a wooden spoon.
04 - Place a large sheet of waxed paper on a work surface; spread the potato mixture into a rectangle measuring approximately 20 by 25 cm and 2 to 2.5 cm thick using an offset spatula; freeze for 30 minutes.
05 - Heat vegetable oil in a Dutch oven to 163°C, maintaining a depth of about 2.5 cm.
06 - Use a pizza cutter or chef's knife to slice the frozen potato rectangle into uniform fries approximately 2 to 2.5 cm wide.
07 - Carefully add 3 to 5 fries into the hot oil; fry for 5 to 7 minutes, turning occasionally until golden brown; transfer to a paper towel-lined plate; repeat for remaining fries.
08 - Enjoy immediately with preferred dipping sauces such as ketchup or aioli.
