# Ingredients Required:

01 - 3 medium zucchini, cut into 7.5 cm fries

→ Seasonings

02 - 1 teaspoon salt
03 - 1 teaspoon black pepper
04 - 1 tablespoon Italian seasoning blend

→ Coating

05 - 120 ml (1/2 cup) all-purpose flour
06 - 2 large eggs, beaten
07 - 240 ml (1 cup) breadcrumbs, panko or Italian style
08 - 35 g (1/3 cup) grated Parmesan cheese

→ Finishing

09 - 2 tablespoons cooking oil spray

# Guide to Cooking:

01 - Combine flour, salt, pepper, and Italian seasoning on a large plate. In a small bowl, whisk the eggs until smooth. In a separate bowl, mix breadcrumbs with Parmesan cheese.
02 - Cut zucchini into 7.5 cm long fries. Dip each fry into the flour mixture ensuring even coverage, then coat with beaten eggs allowing excess to drip off. Finally, press the fry into the breadcrumb and Parmesan blend to adhere the coating.
03 - Lightly spray the air fryer basket with oil. Arrange coated zucchini fries in a single layer without overcrowding. Lightly spray fries with oil. Air fry at 204°C for 9 minutes or until golden and crisp.
04 - Remove fries carefully from the air fryer and serve immediately while hot to enjoy the crisp texture and flavorful herbs with Parmesan.

01 - For gluten-free and low-carb versions, substitute flour with almond or coconut flour, and breadcrumbs with crushed pork rinds or almond meal combined with nutritional yeast. Adjust seasoning and cooking time accordingly.
