Cut zucchini into 7.5 cm long fries. Dip each fry into the flour mixture ensuring even coverage, then coat with beaten eggs allowing excess to drip off. Finally, press the fry into the breadcrumb and Parmesan blend to adhere the coating.

Lightly spray the air fryer basket with oil. Arrange coated zucchini fries in a single layer without overcrowding. Lightly spray fries with oil. Air fry at 204°C for 9 minutes or until golden and crisp.
