Voodoo Cheese Fries (Printable Version)

# What You'll Need:

→ Fries

01 - A dash of salt if your Cajun blend isn't salty enough
02 - A bit of black pepper, ground (about 1/4 teaspoon)
03 - 1/2 teaspoon garlic powder
04 - 2 tablespoons olive oil, just if you're baking fresh potatoes
05 - About 1 pound (500 grams) frozen or freshly sliced thick or crinkle fries
06 - 1 tablespoon Cajun seasoning
07 - 1/2 teaspoon smoked paprika

→ Cheese Sauce

08 - 3.5 ounces (100 grams) shredded cheddar cheese
09 - A pinch of black pepper
10 - A pinch of salt
11 - 1 tablespoon all-purpose flour
12 - 3/4 cup (200 milliliters) milk, dairy or plant-based
13 - 1/4 teaspoon Cajun spice
14 - 1 tablespoon butter (or plant-based swap)

→ Voodoo Sauce

15 - 1 teaspoon sugar or a squeeze of honey
16 - 1 teaspoon Dijon mustard
17 - 4 tablespoons mayo
18 - 2 tablespoons ketchup
19 - 1 teaspoon garlic powder
20 - 1 teaspoon vinegar or a shot of lemon juice
21 - 1/2 teaspoon smoked paprika
22 - 1 teaspoon hot sauce

→ Toppings (Optional)

23 - Grilled chicken, if you want
24 - Crumbled cheese or a dairy-free choice
25 - Chopped parsley or cilantro, fresh
26 - Sliced olives

# How to Make It:

01 - For frozen fries, cook them as it says on the bag, then sprinkle extra Cajun seasoning once they're done. If working with fresh potatoes, slice up, soak in cold water for about half an hour, drain, dry them well, toss in olive oil and your spices (Cajun blend, garlic, paprika, salt, black pepper), and roast at 425°F (220°C) about 25 minutes, maybe a little more, or air-fry till crisp and golden.
02 - Get a saucepan on medium heat and melt butter. Stir in flour till it looks smooth and let it cook for a minute or so. Slowly pour in your milk, whisking so it doesn't get lumpy, until it thickens up. Add in shredded cheese, a bit of Cajun seasoning, some salt and pepper. Keep stirring till smooth and cheesy, then keep it on warm.
03 - Pop mayo, ketchup, Dijon, hot sauce, garlic powder, smoked paprika, vinegar or lemon juice, and sugar or honey in a bowl. Whisk until creamy and blended. Try it out, then tweak for more zing or kick if you want.
04 - Pile the hot fries up on your plate. Generously spoon over the cheese sauce. Scatter toppings like jalapenos, red onion, scallions, and herbs. Splash a good bit of that voodoo sauce across the top. Dig in right away so everything stays crunchy and gooey.
