# Ingredients Required:

→ Meat

01 - 454 g ground beef (80/20 fat ratio)
02 - 227 g chorizo, casings removed

→ Vegetables

03 - 1 medium yellow onion, finely chopped
04 - 2 cloves garlic, minced
05 - 1 jalapeño, seeded and minced (optional)

→ Canned goods

06 - 1 can (284 g) Rotel Diced Tomatoes & Green Chilies, undrained
07 - 1 can (284 g) Hot Rotel Diced Tomatoes & Green Chilies, undrained

→ Cheese

08 - 227 g Velveeta cheese, cut into cubes
09 - 227 g cream cheese, softened
10 - 100 g shredded Monterey Jack cheese
11 - 56 g shredded Pepper Jack cheese

→ Dairy

12 - 60 ml milk or half-and-half (adjust for consistency)

→ Spices

13 - 1 teaspoon chili powder
14 - 1/2 teaspoon ground cumin
15 - 1/4 teaspoon smoked paprika
16 - Salt and freshly ground black pepper, to taste

→ For serving

17 - Tortilla chips
18 - Chopped fresh cilantro
19 - Pico de gallo
20 - Diced avocado
21 - Sliced green onions

# Guide to Cooking:

01 - In a large skillet over medium-high heat, brown ground beef and chorizo, breaking apart with a spoon until no pink remains. Drain excess fat.
02 - Add chopped onion to the skillet and cook until softened, approximately 5 minutes. Stir in minced garlic and cook for an additional minute until fragrant.
03 - Pour in both cans of Rotel including the juice. Add minced jalapeño if desired, then stir to combine evenly.
04 - Reduce heat to low and add Velveeta cubes, cream cheese, Monterey Jack, and Pepper Jack cheeses. Stir continuously until fully melted and smooth.
05 - If mixture is too thick, incorporate milk or half-and-half in tablespoon increments until desired creaminess is achieved.
06 - Add chili powder, ground cumin, smoked paprika, salt, and black pepper. Stir well and taste to adjust seasoning accordingly.
07 - Transfer queso to a serving bowl and garnish with cilantro, pico de gallo, avocado, green onions, sour cream, or guacamole as preferred. Serve immediately with warm tortilla chips.
