Italian Turkey Burger Soup (Printable Version)

# Ingredients Required:

01 - 680 g ground turkey breast

02 - 1 large onion, chopped
03 - 3 cloves garlic, finely minced
04 - 225 g carrots, sliced
05 - 225 g celery, sliced
06 - 1 can (796 g) diced tomatoes, undrained
07 - 60 ml fresh parsley, chopped

08 - 710 ml beef broth
09 - 30 ml olive oil

10 - 4 tbsp (60 g) tomato paste
11 - 1 tbsp fresh basil or 1 tsp dried
12 - 1 tbsp fresh oregano or 1 tsp dried
13 - 1 tbsp fresh thyme or 1 tsp dried
14 - ½ tsp chili pepper flakes
15 - ½ tsp salt
16 - ½ tsp black pepper

# Guide to Cooking:

01 - Heat olive oil in a large skillet over medium heat. Add ground turkey, salt, pepper, chopped onion, and minced garlic; sauté until the turkey is fully browned.
02 - Transfer browned turkey mixture to a Dutch oven or large pot. In the same skillet, sauté sliced carrots and celery until just tender, then add to the Dutch oven.
03 - Add diced tomatoes (with juices) to the skillet to deglaze, scraping up browned bits. Stir in beef broth, tomato paste, basil, oregano, thyme, and chili flakes; bring to a boil.
04 - Pour the mixture from the skillet into the Dutch oven. Stir to combine all ingredients thoroughly and simmer on low heat for 30 to 40 minutes to meld flavors.
05 - Add chopped fresh parsley during the last 5 to 10 minutes of cooking to preserve its brightness and flavor.
