Preheat the oven to 200°C. Toss halved baby potatoes with olive oil, dried oregano, salt, and pepper. Roast for 25 minutes until tender and slightly golden. Skip this step if using cooked pasta.

In a skillet over medium heat, cook the sausage until browned and cooked through. Remove from heat and set aside.

Using the same skillet, sauté sliced bell peppers and onion until softened and slightly caramelized.

In a 23×33 cm baking dish, layer the roasted potatoes or cooked pasta, browned sausage, and sautéed vegetables evenly.

Pour marinara sauce evenly over the layered ingredients and gently toss to combine. Top with shredded mozzarella and grated parmesan.

Cover the baking dish with foil and bake at 190°C for 25 minutes.

Remove the foil and continue baking for an additional 10 to 15 minutes until the cheese is bubbly and slightly golden.
