Combine warm water, sugar, and active dry yeast in a small bowl. Stir gently and let rest for 5 minutes until frothy.

In a large bowl, whisk together flour, salt, and Italian seasoning. Create a well in the center.

Pour yeast mixture and olive oil into the flour well. Stir until combined, then knead for 8-10 minutes until smooth and elastic.

Place dough in an oiled bowl, cover with damp cloth or plastic wrap, and let rise for 1 hour or until doubled in size.

Punch down dough and turn onto floured surface. Roll into a rectangle approximately 30 cm long by 15 cm wide.

Brush dough with olive oil. Evenly sprinkle mozzarella, Parmesan, and Italian seasoning over the top. Press gently to adhere.

Cover dough and let rise another 30 minutes.

Preheat oven to 190°C. Bake dough for 25-30 minutes until top is golden brown and hollow sounding when tapped.
