09 - 120 milliliters evaporated milk
10 - 1 egg
11 - 1 teaspoon dry mustard
12 - 1 teaspoon salt
13 - 0.5 teaspoon cracked black pepper
14 - 227 grams shredded white cheddar cheese
15 - 1.5 teaspoons tapioca starch
16 - 1.5 teaspoons lemon juice

17 - 6 strips crispy cooked bacon, cut into 1.25 cm pieces
18 - 1 to 3 fried eggs
19 - 2 to 3 tablespoons thinly sliced chives

# Guide to Cooking:

01 - Preheat the oven to 204°C. Arrange waffle fries in a single layer on a baking sheet. Bake for 20 to 25 minutes until golden and crispy.
02 - Heat olive oil and butter in a skillet over medium-high heat. Add chopped yellow onion and cook for 3 minutes. Add chopped green and red bell peppers, season with salt and pepper, and cook for an additional 4 to 5 minutes until slightly caramelized.
03 - In a saucepan over medium-low heat, whisk evaporated milk, egg, dry mustard, salt, and cracked black pepper until combined. Gradually whisk in shredded cheddar cheese, tapioca starch, and lemon juice until smooth and creamy.
04 - On a large serving platter, layer half of the crispy fries, followed by half of the sautéed vegetables and half of the bacon pieces. Drizzle half of the cheese sauce over the layers. Repeat with remaining fries, vegetables, bacon, and cheese sauce. Top with fried eggs and sprinkle with chives.
