Chop the onion and jalapeño pepper, mince the garlic, and drain the diced tomatoes.

Heat olive oil in a skillet over medium heat. Sauté the onion until soft, add garlic and jalapeño, and cook until fragrant. Stir in diced tomatoes with juices and simmer for 10 minutes until slightly thickened.

In another skillet, heat some oil over medium-high heat and fry each corn tortilla until golden and crispy, then set aside.

Using the same skillet, crack eggs and cook until whites are set but yolks remain runny, approximately 2 to 3 minutes.

Place a fried tortilla on each plate, spoon the tomato mixture over it, top with an egg, and garnish with cilantro, avocado slices if desired, and a squeeze of lime juice.
