In a bowl, combine shredded chicken, salt, black pepper, crushed red pepper flakes, chipotle sauce, Greek yogurt, chopped chives, diced red onion, grated carrot, and shredded cheddar cheese. Mix thoroughly until evenly incorporated.

Spread butter on one side of each bread slice. Place the slices butter-side down on a heated pan or griddle and toast lightly until golden.

Flip the toasted bread slices and spread a generous layer of the chicken mixture on the toasted side. Top with mozzarella cheese and cover with another bread slice.

Apply a thin layer of butter to the outside of each sandwich. Toast over medium-low heat for 3 to 4 minutes on each side until the bread is crisp and the cheese melts.
