Hot Cheesy Chicken Melt (Printable Version)

A warm melt with shredded chicken, chipotle flavor, and gooey cheeses on toasted bread.

# Ingredients Required:

01 - 200-250 g boiled and shredded chicken breast
02 - 50 g peeled and grated carrot
03 - ½ red onion, diced
04 - 2 tablespoons fresh chives, chopped

05 - ¼ teaspoon salt
06 - ½ teaspoon ground black pepper
07 - ½ teaspoon crushed red pepper flakes
08 - ½ cup chipotle sauce
09 - 1 tablespoon Greek yogurt

→ Cheeses

10 - ½ cup shredded cheddar cheese
11 - Mozzarella cheese, as needed

12 - Butter, as needed
13 - 8 slices sandwich bread

# Guide to Cooking:

01 - In a bowl, combine shredded chicken, salt, black pepper, crushed red pepper flakes, chipotle sauce, Greek yogurt, chopped chives, diced red onion, grated carrot, and shredded cheddar cheese. Mix thoroughly until evenly incorporated.
02 - Spread butter on one side of each bread slice. Place the slices butter-side down on a heated pan or griddle and toast lightly until golden.
03 - Flip the toasted bread slices and spread a generous layer of the chicken mixture on the toasted side. Top with mozzarella cheese and cover with another bread slice.
04 - Apply a thin layer of butter to the outside of each sandwich. Toast over medium-low heat for 3 to 4 minutes on each side until the bread is crisp and the cheese melts.
05 - Remove sandwiches from the pan, slice diagonally, and serve immediately while warm.
